Ingredients

  • Chicken: 8 bone in skin on chicken thighs (about 1.2 kg / 2.6 lbs), 1 tsp kosher salt, 1/2 tsp freshly ground black pepper
  • Garlic Butter Sauce: 4 tbsp unsalted butter melted, 4 cloves garlic finely minced, 1 tbsp fresh lemon juice, 1 tsp dried Italian herbs (or a mix of oregano thyme and basil), 1/2 tsp smoked paprika
  • Finishing Touches: 2 tbsp fresh parsley chopped, Lemon wedges for serving (optional)

Instructions

Preheat Oven:
Preheat the oven to 220°C (425°F). Lightly grease a large baking dish or ovenproof skillet.
Season Chicken:
Pat the chicken thighs dry with paper towels. Season both sides evenly with salt and pepper.
Prepare Sauce:
In a small bowl combine melted butter minced garlic lemon juice Italian herbs and smoked paprika. Mix well.
Arrange Chicken:
Arrange chicken thighs in the prepared baking dish skin side up. Pour the garlic butter sauce evenly over the chicken ensuring each thigh is coated.
Bake:
Bake for 30 35 minutes or until the chicken skin is golden and crispy and the internal temperature reaches 75°C (165°F).
Finish:
Remove from oven. Spoon pan juices over the chicken and sprinkle with fresh parsley.
Serve:
Serve hot with lemon wedges on the side.
