02 - 4 ounces sharp cheddar cheese, shredded

03 - ½ cup well-drained kimchi, chopped

# Directions:
01 - Evenly spread softened butter on one side of each bread slice.
02 - Place two buttered slices on a clean surface with the buttered side down.
03 - Distribute shredded cheddar evenly on top of both slices.
04 - Spread chopped kimchi evenly over the cheese, then sprinkle green onions and sesame seeds if desired.
05 - Place remaining bread slices on top, buttered side facing outward.
06 - Warm a skillet over medium-low heat.
07 - Place sandwiches in the skillet and cook for 3 to 4 minutes per side, pressing gently with a spatula, until bread is golden and cheese melted.
