03 - In a separate bowl, blend the melted coconut oil or butter, maple syrup or honey, egg, vanilla extract, almond extract, and lemon zest until smooth.
04 - Pour wet ingredients into dry ingredients and stir gently until a soft dough forms.
05 - Fold mini chocolate chips or dried fruit into the dough if using, to evenly distribute.
06 - Scoop rounded tablespoons of dough and roll into balls. Place them evenly spaced on the prepared baking sheet.
07 - Bake for 10 to 12 minutes, or until edges are lightly golden. Let the cookie balls cool on the baking sheet for 5 minutes before transferring to a wire rack.
08 - Whisk powdered sugar, milk, and vanilla extract until smooth to create the glaze. Dip cooled cookie balls into the glaze, then sprinkle with festive decorations. Allow glaze to set before serving.
