# Directions:
01 - In a large bowl, combine green cabbage, red cabbage, julienned apple, dried cranberries, grated carrot, and sliced green onions. Toss gently to mix.
02 - Whisk together Greek yogurt, apple cider vinegar, honey, Dijon mustard, poppy seeds if using, and a pinch of salt and black pepper in a small bowl until smooth.
03 - Pour the dressing over the slaw mixture and toss thoroughly to coat. Allow the slaw to rest for 5 minutes to let flavors meld.
04 - Lay out the tortillas and place ¼ cup of baby spinach onto the center of each. Layer 2 ounces of sliced turkey over the spinach.
05 - Top the turkey with a generous portion of the cranberry apple slaw.
