01 - 1 1/2 lb ground beef (80/20)
02 - 1/2 lb ground pork
03 - 1 cup breadcrumbs
04 - 1/2 cup whole milk
05 - 2 large eggs

08 - 2 tbsp fresh parsley, chopped
09 - 1 tsp dried thyme

14 - 1/3 cup ketchup
15 - 2 tbsp brown sugar
16 - 1 tbsp Dijon mustard
→ Mashed Potatoes
17 - 2 lb russet potatoes, peeled and cut into chunks
18 - 4 tbsp unsalted butter
19 - 1/2 cup whole milk, plus more as needed
20 - Salt, to taste
21 - Freshly ground black pepper, to taste
22 - 2 tbsp fresh chives or parsley, chopped (optional)
# Directions:
01 - Preheat the oven to 350°F. Line a baking sheet with parchment paper or lightly grease a loaf pan.
02 - In a large bowl, gently mix ground beef, ground pork, breadcrumbs, milk, eggs, onion, garlic, parsley, thyme, salt, pepper, ketchup, and Worcestershire sauce until just combined.
03 - Form the mixture into an 8-by-4 inch loaf on the baking sheet or press into the loaf pan.
04 - Mix ketchup, brown sugar, and Dijon mustard in a small bowl. Spread half of the glaze over the meatloaf.
05 - Bake for 45 minutes, then remove from oven.
06 - Spread the remaining glaze on top of the meatloaf and return to oven.
07 - Bake for an additional 15 to 20 minutes, or until the internal temperature reaches 160°F.
08 - Place potatoes in a large pot, cover with salted cold water, and bring to a boil. Simmer until tender, about 15 to 18 minutes, then drain.
09 - Return potatoes to pot. Add butter and mash until smooth. Stir in milk, adding more as needed for desired creaminess, and season with salt and pepper. Fold in chives or parsley if desired.
10 - Allow meatloaf to rest for 10 minutes before slicing. Serve alongside mashed potatoes.
