# Directions:
01 - Heat olive oil in a large pot over medium heat. Add diced onion, carrot, celery, and bell pepper. Cook for 5 to 7 minutes, stirring occasionally, until vegetables begin to soften.
02 - Stir in minced garlic and cook for 1 minute until fragrant.
03 - Add cubed potatoes, rinsed lentils, diced tomatoes with juice, ground cumin, smoked paprika, dried thyme, bay leaf, and vegetable broth. Stir well to combine all ingredients.
04 - Bring the mixture to a boil, then reduce heat to low. Cover the pot and simmer for 30 to 35 minutes, stirring occasionally, until lentils and potatoes are tender.
05 - Remove the bay leaf from the stew. Stir in chopped spinach or kale and cook uncovered for 2 to 3 minutes until wilted.
06 - Taste and season with salt and freshly ground black pepper. Add additional broth or water if a thinner consistency is desired.
07 - Ladle the stew into bowls and serve hot. Garnish with fresh chopped parsley and lemon wedges.
