→ Finish

17 - Juice of 1/2 lemon

# Directions:

01 - Heat olive oil in a large soup pot over medium heat. Add onion, carrots, and celery. Sauté for 5 minutes until softened and fragrant.
02 - Stir in garlic, turmeric, cumin, coriander, and black pepper. Cook for 1 minute until spices become fragrant, being careful not to burn them.
03 - Add diced chicken to the pot and cook, stirring frequently, until lightly browned on all sides, approximately 3 minutes.
04 - Pour in chicken broth and add pearl barley along with the bay leaf. Bring to a boil, then reduce heat to low and simmer uncovered for 35 minutes, stirring occasionally.
05 - Add diced zucchini to the pot and continue simmering for 10 minutes, until barley is tender and chicken is cooked through completely.
06 - Stir in spinach leaves and cook for 2 minutes until just wilted. Season with salt and lemon juice to taste. Remove and discard the bay leaf before serving.
07 - Ladle hot soup into bowls and garnish generously with chopped fresh parsley. Serve immediately while hot.
