# Directions:
- Slice cucumber into 0.4 inch rounds. Cut one carrot into sticks for the snowman's arms and peel thin ribbons from the other carrot to create the scarf. Slice bell peppers into small strips and pieces for hat, buttons, and scarf accent. Slice black olive into thin rounds for eyes and mouth.
- On a large platter, position three cauliflower florets vertically in ascending size to form the snowman's body. Arrange cucumber rounds at the base to represent snow. Place carrot sticks as arms and carrot ribbons around the neck to resemble a scarf. Use black olive slices for eyes and mouth, a small carrot piece for the nose, and bell pepper strips to create hat and buttons. Surround with cherry tomatoes and remaining vegetables as extra crudités.
- In a small mixing bowl, whisk together Greek yogurt, mayonnaise, lemon juice, finely chopped chives or dill, and minced garlic. Season with salt and pepper to taste.
- Place the dip beside or within the platter for convenient dipping.
