Lucky Clover St Patricks Bites (Printable)

# Ingredient List:

01 - 3.5 oz fresh spinach, chopped
02 - 4.4 oz cream cheese, softened
03 - 2.1 oz shredded cheddar cheese
04 - 1 garlic clove, minced
05 - 1/4 tsp salt
06 - 1/8 tsp black pepper

→ Pastry

07 - 1 sheet puff pastry, thawed (approx. 8.8 oz)
08 - 1 egg, beaten (for egg wash)

→ Decoration

09 - 24 small fresh basil leaves

# Directions:

01 - Preheat the oven to 400°F and line a baking sheet with parchment paper.
02 - Cook spinach in a pan over medium heat for 1 minute, then drain and allow to cool slightly.
03 - Mix the wilted spinach, cream cheese, cheddar, minced garlic, salt, and black pepper in a bowl until homogeneous.
04 - Unroll the puff pastry and cut into 24 equal squares, approximately 2 inches each side.
05 - Place a heaping teaspoon of the filling in the center of each pastry square.
06 - Fold the four corners of each square toward the center, pinching to seal and form a clover shape.
07 - Brush the tops of each shaped bite with beaten egg.
08 - Bake in the oven for 15 to 18 minutes until the pastry is golden and puffed.
09 - Remove from oven and immediately top each bite with a fresh basil leaf.
10 - Allow the bites to cool slightly before serving.
