# Expert Advice:

01 -
  • They taste like an indulgent treat but you're basically eating whole foods and dates, so there's zero guilt attached.
  • Your hands will smell like warm tea and vanilla for hours after making them, which is honestly half the appeal.
  • No baking, no oven, no waiting around—these come together while you're still in your morning clothes.
  • They're perfect for when you want something sweet that actually gives you sustained energy instead of a crash an hour later.
02 -
  • Don't skip pitting your dates fresh—I learned this the hard way when I found a pit in the middle of a ball mid-chew, and now I always double-check even if they're labeled pitted.
  • If your dates are on the drier side, add that water gradually instead of all at once, because once they're too wet there's no going back and you'll end up with sticky sludge.
  • The mixture should smell amazing at every step—if your hojicha smells dusty or stale, it won't have that toasty tea flavor that makes these special.
03 -
  • Keep a damp towel next to you while rolling because wiping your hands occasionally keeps the whole process from getting slippery and chaotic.
  • If you're making the nut-free version with seeds, sunflower and pumpkin seeds actually add a slightly savory edge that makes the hojicha flavor pop even more.
