→ Garnish and Dipping

12 - 1/4 cup fresh cilantro, chopped
13 - 1 cup prepared salsa
14 - 1/2 cup sour cream
15 - 1 avocado, sliced (optional)
16 - Lime wedges (optional)

# Directions:

01 - Preheat oven to 400°F. Line a large baking sheet with parchment paper.
02 - In a large mixing bowl, combine cheddar cheese, Monterey Jack cheese, black beans, diced bell pepper, sliced green onion, cumin, chili powder, smoked paprika, salt, and pepper. Mix until well combined.
03 - Cut each tortilla in half to create 32 semicircles.
04 - Place 1 tablespoon of cheese mixture on each tortilla semicircle. Fold the straight edge over the filling to form a triangle, pressing gently to seal.
05 - Arrange quesadilla triangles on the baking sheet with points facing inward and slightly overlapping to form a blooming flower shape.
06 - Brush the tops of all quesadilla triangles with melted butter.
07 - Bake for 18-20 minutes until tortillas are golden and cheese is melted.
08 - Transfer to a serving platter and sprinkle with fresh cilantro.
09 - Place salsa, sour cream, and avocado slices in small bowls in the center of the ring. Serve with lime wedges.

# Expert Advice:

01 -
  • It looks like you hired a caterer but uses ingredients you probably already have in your fridge.
  • Everyone can grab their own little triangle and dip without the awkwardness of double dipping.
  • You can prep the whole thing an hour ahead and just pop it in the oven when guests arrive.
02 -
  • Don't skip cutting the tortillas in half or the ring won't shape properly, and you'll end up with a lumpy pile instead of a pretty bloom.
  • If your tortillas are stiff or cold, warm them for a few seconds in the microwave so they fold without cracking.
  • Arrange them tightly or gaps will form and the whole thing loses its visual impact when you serve it.
03 -
  • Press the edges of each triangle firmly after folding so the filling doesn't escape during baking.
  • If you want extra crispy bottoms, skip the parchment and use a light spray of oil directly on the baking sheet.
  • Let the ring cool for two or three minutes before moving it to a platter or it might fall apart on you.
